This past weekend we had the most beautiful weather. The temperatures suddenly dropped and it felt a little like fall so we decided to go apple picking. Yes, it’s hard to believe it’s that time of year again and I’m trying to transition slowly and enjoy these last days of warm weather.
The apples we picked were beautiful and after eating our fill I decided to use the rest to make an apple-pie cake. It’s kind of a cross between pie and a fruit crisp you could say. And it’s a favorite around here.
This is a great recipe because it only takes 6 ingredients and comes together so fast. The best part is everyone likes it!
Ingredients:
5 pounds (12) tart apples
2 cups flour
1 cup light brown sugar
2 teaspoon cinnanon
2 sticks of cold unsalted butter
2 tablespoons fresh lemon juice
Directions:
Preheat oven to 350 degrees and Line a cookie sheet with tin foil and set aside.
Using a large mixing bowl, combine flour, brown sugar, and 1 teaspoon cinnamon. (save the other tsp. for later).
You can use either an electric mixer, a pastry cutter or 2 knives to cut in the butter until the mixture forms
pea-size pieces.
Press 2/3 of the mixture onto bottom and 1 inch up the side of a 9-inch spring-form pan and set aside while working on the apple mixture.
Next,
Wash and peel the apples. Cut them into thin slices, and place in a bowl. ( If there’s any liquid on the bottom of bowl be sure to pour it off.)
Toss apple slices with the remaining teaspoon of cinnamon and lemon juice,
and put them in a 9 inch spring-form pan, pressing down gently as you pack them in (they will mound above the edge of the pan). Remember the apples will cook down.
Sprinkle remaining crumb mixture on top.
Now, using the covered cookie sheet, place the spring-form pan on it and bake for about an hour. This will depend on your oven so watch for it to turn golden brown on top.
Run a knife around the edge of the pan, and let the cake cool in the pan. Next remove from spring-form pan.
Serve at room temperature.
There you have it. This would be perfect for dessert, to serve at brunch or a luncheon. You can serve with ice cream too.
