Easter Smoothie

Today I’m excited to share with you my Easter Smoothie! I named it that because the colors are so pretty and remind me of Easter time.  Actually, it would also be perfect before or after a work out, serve as a refreshing drink at a summer party or even Mother’s Day brunch.

There’s three delicious layers of different tastes that work really well together in this one.

It begins with the bottom layer of Golden Yellow. Yummy  mango, sweet peaches, beautiful banana and orange juice. (add all the yellow ingredients together in blender and beat until mixed and pour into a pretty glass).

Golden Yellow Layer:
1/2 cup fresh mango cubes
1/2 cup frozen peaches
3/4 cup orange juice
1/2 banana

Rinse out the blender to begin the middle Pink layer. Beet juice, sweet strawberries and banana.

Pink:
1/2 cup fresh beet juice  (if you’re not a fan of beets, just leave them out. They do, however, add healthy nutrients and you’ll get a more intense color but they’re not necessary).
1/4 cup water
2-3 fresh strawberries, stem removed
1/4 cup frozen strawberries
1/2 banana

Pour the Pink layer slowly on top of your Yellow layer.  Sooo pretty!

The top layer is the Green. Now don’t be scared off because eating your greens never tasted better!

Kale, mixed with sweet apple juice, lemon juice and a pinch of ginger.

Once again, rinse out the blender and mix the following ingredients really well. Then pour slowly on top of the pink layer.
Green:
1/2 cup kale
3/4 cup apple juice
1 Tbsp lemon juice
1/4 cup ice cubes
optional: a pinch of freshly grated ginger

Tip: I added  ice to the layers to make them a little frostier. You can also substitute water with coconut water. (my daughter prefers the coconut water’s sweet taste) or you can substitute with any juice.

Garnish with a slice of peach and add a couple straws then enjoy!
