Frosty Peach Bellini Recipe

We’re enjoying beautiful summer weather here in Chicago.

There have been a few hot days, but each one has been followed by a pleasantly cooler one. We’re definitely being spoiled, but I’m intent on enjoying this beautiful weather while it lasts. That means spending as much time as possible outside with friends and family.

Summer entertaining should be quick and easy. When the weather is beautiful and you’re surrounded by good company, the last thing you want to do is spend hours prepping in the kitchen while everyone else is having fun.

That’s why I’d like to introduce you to our new blog series: Summer Sips & Dips!

Every week we’ll share a simple recipe for a refreshing summer drink or tasty dip. Each one will use simple ingredients and not only be easy to whip up, but sure to please a crowd. (If you have a favorite recipe or trusty standby, let us know in the comments! You can never have enough recipes.) 🙂

My mom and I whipped up these dreamy peach bellinis last weekend for Father’s Day. They were the perfect accompaniment to hanging out with Dad on the patio. Frosty, refreshing and packed with fruit—they were fabulous!

Peach Bellini Recipe

They’re also super easy to make, which is what this series is all about.

All you need are frozen peaches, sugar, prosecco and a blender. Hello, easy summer entertaining!

Peach Bellinis

Ingredients:

  • 2 cups sugar
  • 1 cup water
  • 3 (16-ounce) bags frozen peaches, thawed
  • 1 teaspoon grated orange peel
  • 3 bottles Prosecco or other sparkling wine, chilled
  • Sliced oranges, peaches or mint for garnish

Directions:

Make a simple syrup by stirring the sugar and water in a large saucepan over medium heat until the sugar completely dissolves, about 5 minutes. Let the mixture cool completely.

Puree the peaches and orange peel in a blender. Add 1 1/2 cups of the simple syrup until you’re satisfied with the taste. (We didn’t use all 1 1/2 cups.)

Strain the mixture through a mesh strainer to make it silky smooth.

Pour about 4 tablespoons of the mixture (or as much as you like!) into a glass. (We used fun cocktail glasses, but champagne flutes would make the bellinis look a little fancier.) Pour in Prosecco or sparkling wine to your liking. Garnish and serve!

What’s nice about this recipe is you can swap the peaches for any frozen fruit you like. Strawberries, raspberries, blueberries, mango—the options (and colors!) are endless. Which flavor would you like to try?
