How to turn frozen popsicles into a cocktail– or poptail!

Entertaining on a 90 degree summer day calls for something really cold and refreshing.

We have been enjoying quite a wave of hot weather here in the Midwest, so having a freezer of popsicles and icy treats is a must!

I recently made fresh-fruit popsicles (mango peach and strawberry banana), so I decided to use them to create an icy, cold, refreshing drink to surprise some guests.

The popsicles are not only healthy, but super easy to make. Here’s how I did it:

  1. Fill your blender 2/3 of the way full with frozen mango and peaches. Add a little lemon juice for some liquid. (You could substitute juice, also.) I added a little sweetness by making a simple syrup to taste.
  2. Blend until smooth. Do a little taste test to make sure the mixture is exactly how you want it. I used about 1/2 cup of the syrup, but it is up to you how sweet you want it to be.
  3. Pour the mixture into your molds and cover with tinfoil (if your mold doesn’t come with a lid). Use a sharp, narrow knife to make slits for the popsicle sticks.
  4. Freeze overnight.

I used this same method to make the strawberry-banana popsicles. You can use any fruit you’d like!

To remove the popsicles from the mold, run slightly warm water on the outside of the mold. (Don’t make the water too hot, because you don’t want to melt the pops.)

Another good way to loosen the popsicles is to put one popsicle at a time in a glass of warm water, like this:

When the pops are loosened, gently pull them out and place them in a fancy glass. Pour chilled prosecco over the top!

Fun popsicles napkins make the perfect garnish, too. šŸ™‚

We didn’t want to leave out the little ones, so we made a non-alcoholic version by pouring Sprite or juice over the popsicle. The colored plastic handles easily identify the kiddos nonalcoholic drink. We served them up in plastic glasses too:)

I couldn’t resist using these little flip-flop coasters. They make these drinks even more fun!

Voila! It’s just that easy and oh so yummy! Your guests will love them. Mine did! šŸ™‚
